Genuine Aceto balsamico di Modena is labeled by the European trademarks: I.G.P. („indicazione geografica protetta“) or DOP (Denominazione d’Origine Protetta), which protect its origin and its method of production from imitation. For production of Aceto Balsamico di Modena only Lambrusco and Trebbiano grapes may be used, to which matured balsamic vinegar and fresh wine are added. Aceto Balsamico di Modena has a syrup-like consistency which becomes thicker the longer the vinegar ages.
